Easy Kid Friendly Dinner: Fajita Recipe With Tyson Southwest Pepper Trio #InspireMyDinner

My son plays sports 90% of the year. We’re either running to basketball practice, a baseball game or football conditioning almost every week night of the year. Add in work, homework, and other daily activities and I need supper to be quick and easy so we’re not eating at 10 o’clock at night. I love food we can make in 30 minutes or less start to finish, that’s what I like to #InspireMyDinner. That’s why I was excited to try Tyson’s new Individually Wrapped Chicken Breasts. We tried out both the Southwest Pepper Trio and the Smokey Steakhouse.

We love fajitas at our house, so with the Southwest Pepper Trio I decided it was a great opportunity to make them. It’s a super easy meal I can throw together with just one skillet in under 30 minutes. I stopped by Walmart to pick up all the ingredients I’d need to make the Fajitas. For this recipe I put the chicken in the refrigerator for a day to let it thaw before cooking so I could slice it into strips. For most recipe you don’t have to. You can just follow the cooking directions on the bag.

Southwest Pepper Trio Fajitas Recipe

Ingredients:

  • 4 Tyson Individually Frozen Southwest Pepper Trio Chicken Breasts
  • 1/2 red bell pepper sliced into strips
  • 1/2 green bell pepper sliced into strips
  • 1/2 medium onion sliced
  • 1~ 8oz container of button mushrooms
  • fajita wraps or soft taco shells
  • olive oil for cooking

Optional Toppings:

  • salsa
  • sour cream
  • shredded cheese
  • guacamole or avocado

Instructions:
1. Slice the chicken into thin strips, and saute them with the olive oil over medium heat until the chicken is almost cooked.
2. Throw in the peppers, onion, and mushrooms and saute for several more minutes until the chicken is completely cooked.

3. Use this fajita mixture to top 1/2 of a soft shell tortilla. You can also add sour cream, salsa, shredded cheese, or avocado to your fajita.

4. Enjoy!

I made a fajita salad with mine instead of adding it to a wrap. I topped salad greens with the fajita mixture, cheese, salsa and 1/2 of an avocado. It was delicious!

We also had the Tyson Smokey Steakhouse Seasoned Chicken another night last week, since it was so easy to cook!

I just threw it on the grill, right from the freezer! It was fully cooked in about 45 to 50 minutes with the grill on low.

I love that it was really juicy and tender! It’s so easy to make healthy low fat meals with the Tyson Individually Frozen Chicken Breasts, without much fuss. I added the grilled chicken to some salad greens with some cheese, cauliflower, carrots and a little honey mustard salad dressing to make a fabulous grilled chicken salad. It was delicious!

Since the chicken was already marinated I didn’t have to worry about remembering to marinate it earlier in the day. I didn’t even have to worry about pulling it out of the freezer until I was ready to grill.

I will definitely be using the Tyson Individually Frozen Chicken Breasts on a regular basis at our house, especially through the busy baseball season we have coming up.
