Mornings are always hectic at our house. My husband is trying to get out the door to work, and my son out the door to school. I’m usually trying to start my work day at the same time sometimes I feel like a #DoItAllMom. Even the weekend mornings are sometimes hectic. My son plays sports it seems like year round and sometimes my husband has to work on Saturday mornings. I’m always looking for quick and easy breakfast ideas.
We have a dozen chickens in the barn, so I love to incorporate eggs whenever I can in our breakfast routine. When I decided to give the new Tyson Fully Cooked Sausage a try I knew I wanted to make one of my favorite breakfast dishes, omelets! Southwest omelets are my absolute favorite.
I love omelets because you can cook everything in one pan, and they’re super quick and easy. The best part is, if your omelet doesn’t turn out, you can just call it a scramble instead.
I headed out to our local Sam’s Club to pick up a bag of the new Tyson Fully Cooked Sausage. It was a holiday weekend this weekend, so the store was packed! I knew I was looking for ingredients for my omelet, so I headed for the freezer section. There were tons of product demonstrations going on in the store. I know they’re having taste demonstrations for the new Tyson Fully Cooked Sausage going on in Sam’s Clubs since it’s a new product. I found the sausage easily in the frozen food breakfast section.
I grabbed a bag of the fully cooked sausage. Those 4lb bags will make quite a few omelets! Next I headed over to the dairy section to pick up some cheese, and to the produce section to pick up some peppers and mushrooms.

This weekend I made western omelets for my family. They were a big hit! I’m sure we’ll be making more. Here’s the recipe I used.
For 2 Western Omelets:
- 2 Tyson Fully Cooked Sausage Patties
- 1/2 red or green bell pepper (or a combination of both)
- 3 large mushrooms
- 1/4 medium onion
- 2 eggs
- dash of milk
- 1/2 cup shredded cheddar cheese
Directions:
1. Dice the onions, peppers, mushrooms and sausage and saute them in a skillet with a little olive oil.
2. Heat a no stick skillet sprayed with no stick cooking spray.
3. While the skillet is heating whisk the eggs together in a small bowl with a dash of milk, until the eggs are fluffy with air bubbles.
4. Pour the eggs into the skillet, and roll the skillet around so the eggs are spread evenly across the bottom of the skillet.
5. Let the omelet cook for a couple minutes, then sprinkle on a little shredded cheese and about half of the sauteed sausage and vegetable mixture.
6. Use the spatula to fold one half of the omelet over the other half. Let the omelet cook for a few seconds longer then slide it out of the pan and onto the plate.
7. Serve your omelet straight, or topped with a little salsa.
If you’re not an egg fan, you can just saute the sausage and vegetables and serve them up without the egg.
The Tyson Fully Cooked Sausage would also be great for quick sandwiches. You can heat it on the stove or in the microwave. I bet it would be great on the grill too for a fast supper after a baseball game this summer. I’m also planning to take some sausage along to the lake this summer. I love quick and easy meals when we’re there.
