I have a new obsession lately. I had never tried Nutella until recently. I wanted to see what all the fuss was about so I bought some. I thought I might use it to bake with. The first jar of Nutella never made it into a recipe, neither did the second or third jar! I found out I love Nutella on sliced apples! Whenever I get a new jar it’s my breakfast of choice!
I finally bought a fourth jar today and actually baked something with it! I decided to make some cookies, but I wanted to make them without wheat and without adding any additional sweetener since Nutella is plenty sweet all by itself. I used some coconut flour and it’s a little sweet too. If it’s still not sweet enough for your taste buds you can add a little sugar or honey if you want.
Gluten Free Chocolate Nutella Cookies
Ingredients:
- 1/2 cup almond meal
- 1/2 cup coconut flour
- 1/2 cup Nutella
- 1 egg
- 1/4 cup cocoa powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
Instructions:
1. Preheat the oven to 350`F.
2. Combine all the ingredients in a medium mixing bowl.
3. Blend with a hand mixer until smooth.
4. Drop by teaspoonfuls onto a cookie sheet covered with parchment paper.
5. Bake for 10 minutes.
These cookies are really good fresh out of the oven while they’re still warm, melty and gooey! I love the chocolate Nutella flavor!
They’re also great for a quick after school snack, or even stored in the freezer and pulled out a few at a time.
Nutella doesn’t say it’s a gluten free product, so if you’re extremely sensitive to gluten you may want to use a little caution. I have some issues with gluten, and Nutella doesn’t give me any problem but I don’t want cause an issue for someone else!
This recipe was a hit at our house and we’ll definitely be making it again, if I can keep Nutella in the cupboard long enough!
