    Peppermint Sandwich Cookie Recipe

    Peppermint is one of my families favorite flavors this time of year! I’ve shared several peppermint treats over the last few weeks, and today I want to share another delicious favorite, a peppermint sandwich cookie recipe. You can make this sandwich cookie really easy by using a sugar cookie mix, or sugar cookies from the local grocery store and a can of  white icing with a couple drops of peppermint oil mixed in, but it’s even better made from scratch.

    I’m going to share my favorite sugar cookie and butter cram icing recipes with you today!

    Peppermint Sandwich Cookie Recipe

    Ingredients
      

    • Sugar Cookie Ingredients:
    • 1 cup butter
    • 2 cups white sugar
    • 2 eggs
    • 2 teaspoons baking powder
    • 2 teaspoons vanilla
    • 2 teaspoons baking soda
    • 4 1/2 cup flour
    • 1/2 teaspoon salt
    • 1 cup sourcream or buttermilk
    • Butter Cream Icing Ingredients:
    • 1 cup butter softened but not melted
    • 4 cups powdered sugar
    • 1 teaspoon vanilla
    • pinch of salt
    • 5-6 tablespoons of warm water
    • A couple drops of peppermint oil or peppermint extract.
    • Crushed candy canes or mint candies

    Instructions
     

    • Sugar Cookie Directions:
    • Mix in the order given with a mixer.
    • Drop by tablespoons on a lightly greased cookie sheet.
    • Flatten with the floured bottom of a small glass, sprinkle with a mixture of nutmeg and sugar. (1/2 teaspoon nutmeg to 2 teaspoons sugar)
    • Bake at 375` for 10-12 minutes.
    • Butter Cream Icing Directions:
    • Cream the butter and shortening together until smooth, add the vanilla.
    • Dissolve the salt into the warm water completely.
    • Mix the water/salt mixture into the creamed butter and shortening.
    • Add in a couple drops of peppermint oil or peppermint extract.
    • Put the mixer on low, and add powdered sugar slowly, mixing constantly.
    • The amount of water can be increased or decreased to achieve the desired consistency, I usually have the best luck with 6 tablespoons.
    • Put a liberal amount of icing on the back of half of the cookies, then sandwich them with a second cookie.
    • Roll the sides of the cookies in crushed candy canes.
    • Enjoy!

    This will make a wonderful cookie for a cookie swap, or for your holiday dessert buffet! Don’t forget to leave a couple out for Santa on Christmas Eve!
