Salsa Chicken Recipe ~ 1 Pot 3 Ways

I love meals that are super quick, and easy especially on week nights when we’re running all night. One of my favorite go to meals is this salsa chicken recipe. You only need 20 minutes and 4 ingredients and you can serve it up 3 ways. That makes it a total win for my family, who can never seem to agree on what they want for supper.

Salsa Chicken Recipe

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes
Servings 4 -6

Ingredients
  

  • 1 ~ 32 ounce can chicken
  • 1 jar of your favorite salsa~ I use Tostitos Restaurant Style
  • 1 small onion chopped
  • 1 small sweet pepper chopped
  • 1 tablespoon olive oil

Instructions
 

  • Dice the onion and the sweet pepper, then add to a skillet or pot with the olive oil.
  • Saute the onion pepper and olive oil for a couple minutes, then add the chicken, and salsa.
  • Simmer for about 15 to 20 minutes.
  • Serve over lettuce to make a salad, on a wrap, or in a sandwich.

I serve the salsa chicken up 3 different ways. I love it over lettuce, topped with a little guacamole, tomato, cilantro, or even sour cream.

My husband loves it in a sandwich, and even to take the leftovers to work the next day!

I also tried out the pot clip spoon rest. I’ve never had one of these gadgets before, and I have to say it came in super handy! I am definitely keeping this within reach! I hate it when I rest the spoon in the pot then it falls down inside, or when I lay it on the stove and it leaves a spot. This is a cool little invention!
