Mom Break: Dark Chocolate Coconut Cream and Almond Mocha Recipe With Seattle’s Best Coffee #RedCupShowdown

by Linette

I love a good cup of coffee, especially when there’s a mocha involved! I usually stop at my favorite coffee shop to pick up my favorite coffee drink, but lately I’ve been playing around with recipes at home. Seattle’s Best Coffee is having a recipe contest, the Red Cup Showdown. I thought if I create a good recipe I might be able to enter, plus if I can create my own mocha recipe at home, I won’t have to go out to a coffee house to buy it!

I started with a trip to Walmart to pick up the ingredients. First stop, the coffee aisle to pick up some Seattle’s Best Coffee. There were several flavors and roasts to choose from, including dark and intense, Hazelnut Flavor, and Decaf. I decided on the medium blend Organic Free Trade Seattle’s Best Coffee.

I grabbed some of the other ingredients I would need, plus some beach towels and a few other items I needed for a trip we’re taking in a couple weeks, and headed for the checkout.

I knew I wanted to make a mocha with coconut and dark chocolate. I was thinking something to taste like an Almond Joy(tm) candy bar. I looked up some recipes online, then I found a simple mocha recipe on the back of the chocolate syrup bottle. I tweaked the recipe a little, and swapped out coconut milk for regular milk and here’s what I came up with.

Dark Chocolate Coconut Cream and Almond Mocha Recipe

Ingredients:

  • 1/2 cup of Seattle’s Best Coffee (Brewed strong)
  • 3 tablespoons dark chocolate syrup
  • 3 tablespoons cream of coconut
  • 1/2 cup coconut milk
  • 1/4 teaspoon almond extract (optional)
  • whipped topping
  • dark chocolate chips

Directions:

This is a super easy recipe. All you have to do is brew your coffee, add the chocolate syrup and other ingredients to the cup and you’re ready to sip. No fancy coffee machines necessary!

1. Brew your coffee a little stronger than normal.

2. While the coffee is brewing, add the chocolate syrup, cream of coconut, almond extract and coconut milk to your coffee mug.

3. Fill the rest of the coffee mug with coffee. Check out those yummy layers!

4. Stir and top with whipped topping and chocolate chips.

Enjoy!

I have to say it’s just as good as those coffee house drinks! I think I might have a Red Cup Showdown recipe contender!

About the contest: Seattle’s Best Coffee and Celebrity Chef Jeff Mauro Ask America to ‘Step Right Up’ to The Red Cup Showdown – A Search for the Next Great Coffee Drink

Seattle’s Best Coffee and Jeff Mauro will embark on a 3,000-mile journey to five major state fairs all across the nation for Red Cup Showdown live competitions right along with cooking showdown favorites like custard pie contests, brownie bake-offs and strawberry jam competitions.

“From chicken fried bacon to red velvet funnel cake, State Fairs are a hotbed of cooking creativity,” said Jeff Mauro, celebrity chef. “There’s no better place to go to see how Seattle’s Best Coffee can be shaken up, turned upside down and transformed into something we’ve never tasted before. I can’t wait to meet some great people and see what they bring to the table for the Red Cup Showdown.”

The best part is everyone at the fair will also be able to get ice cold coffee and more at the Seattle’s Best Coffee exhibits on the midway. They can cool off with a free iced coffee drink from an all American fair food lineup including Cotton Candy Mochas, Elephant Ear Lattes and Carmel Pretzel Mochas. Yum! Sounds delicious to me!

If you would like to enter the contest, or see if they’re coming to a fair near you so you can sample some of these yummy treats, you can find more information on Facebook app here: RedCupShowdown.
